Beef Availability in 2026
Our next processing dates are scheduled for late June through July of 2026. Availability is limited and reservations are first-come, first-served.
Hanging Weight Overview
Our beef typically has the following hanging weight ranges:
- Quarter Beef: 130–175 lbs hanging weight
- Half Beef: 260–350 lbs hanging weight
- Whole Beef: 525–700 lbs hanging weight
Freezer Space Requirements
Here’s an estimate of freezer space needed for your beef:
- Quarter Beef: ~4 cubic feet
- Half Beef: ~8 cubic feet
- Whole Beef: ~16 cubic feet
Whole, Half, and Quarter Beef Pricing
In Northeast Kansas, our pricing for grass-fed, grass-finished beef is as follows:
- Whole, Half, or Quarter Beef: $5.75 per pound hanging weight
- $500 Non-Refundable Reservation Fee (applied toward final balance)
Processing Fees
We work with Simon Meat Locker in Olsburg, KS for all local processing, and their average fees—shown below—can vary based on the cuts and packaging you choose:
- Beef Processing: Average of $1.25–$1.50 per pound hanging weight. Link for more information HERE.
Note: Processing fees are paid directly to Simon Meat Locker at pickup. Keep in mind that these fees can change depending on what you select—for example, options like ground beef packaging size, or specialty cuts may increase or decrease the total cost.
Example Pricing Estimate
Let’s look at an example for a Quarter Beef with a 175 lb hanging weight:
- Reservation Payment: $500
- 175 lbs × $5.75/lb = $1,006.25
- Then, the subtotal of $506.25 ($1,006.25 – $500 deposit) becomes due to PTFF when we deliver your beef to Simon Meat Locker.
- Processing Fee (average): $325 (paid directly to Simon Meat Locker see the link for processing estimates on whole and half beef.)
Estimated Total Cost: ~$1,350–$1,450 for approximately 100–110 lbs of take-home beef cuts (depends on yield and cutting instructions).
Note: Final invoices are based on the official hanging weight recorded by Simon Meat Locker.
Cutting Instructions
Once you’ve reserved your beef, you can easily work with our partner, Simon Meat Locker, to customize your cutting instructions just the way you like.
- Standard cuts (steaks, roasts, ground beef)
- Specialty cuts (flank, brisket, short ribs, stew meat, etc.)
- Packaging preferences (vacuum seal, paper wrap, ground beef size options)
You’ll receive a cutting instruction form once your reservation is confirmed.

Pickup Instructions
Once Simon Meat Locker finishes processing your beef, they will contact you directly to arrange pickup. After we receive your final payment, Prairie to Fork Farm will authorize your order for pickup
Processing typically takes 2–3 weeks from drop-off to completion.
