At Prairie to Fork Farm, we specialize in high-quality pasture-raised pork from our heritage breed cross of Red Wattle and Mangalica pigs. This pork is growth hormone and antibiotic free. At Prairie to Fork Farm, we specialize in high-quality pasture-raised pork from our heritage breed cross of Red Wattle and Mangalica pigs. Here’s everything you need to know about purchasing pork by hanging weight. 

Hog Availability in November 2025

Hog availability will be in mid October in 2025!

Hanging Weight Overview

Our pigs may have a live weight ranging from 210 to 350 pounds. After processing, you can expect a hanging weight of about 140 to 250 pounds, which is approximately 70-75% of the live weight.

Freezer Space Requirements

Here’s an estimate of the freezer space needed:

  • Whole Hog (Approx. 140 to 250 lbs hanging weight): Requires about 7 to 10 cubic feet of freezer space.
  • Half Hog (Approx. 70 to 125 lbs hanging weight): Requires about 3.5 to 5 cubic feet of freezer space.

Whole & Half Hog Pricing

In Northeast Kansas, our pricing for pasture-raised pork is as follows:

  • Whole Hog: $3.00 per pound hanging weight ** $200 Non-Refundable Reservation
  • Half Hog: $3.25 per pound hanging weight ** $150 Non-Refundable Reservation

Processing Fees

Simon Meat Locker average for processing fees estimation:

– Whole Hog Processing: $365**
– Half Hog Processing: $213**

**Note: Processing fees are separate and must be paid directly to Simon Meat Locker. Here is a link to the processing cost for Whole and Half Hogs. These are averages only and depending on your individual processing selections this will vary. (i.e. more cured cuts will increase your average cost).

Whole Hog Pricing Example:

  • Whole Hog Reservation payment of $200
  • 250# Hog Live weight with a hanging weight of 175# x $3.00 (Whole Hog Price per pound hanging weight) = $525.00 – $150 (Reservation Fee) = $375 due to PTFF after delivery to Simon Locker on the appointed date.
  • Whole Hog Processing fee from Simon Meat Locker averages $365 for a Whole Hog (Price will vary depending on your cutting instructions)
  • Total Cost Estimate for this whole hog example = $890 (give or take ~$180 depending on hog size)

**Note: Final invoice will occur after the animal hanging weight is established by Simon Meat Locker. Processing fees are separate and must be paid directly to Simon Meat Locker in advance of pickup.

Cutting Instructions

When you purchase your hog, you’ll have the option to customize your cuts at Simon Meat Locker. Options include:

– Standard cuts (e.g., chops, roasts, bacon)
– Specialty cuts (e.g., sausage, cured meats)

To specify your cutting instructions once you have secured your hog reservation we will ask you to complete the online cutting form available for Simon Meat Locker.

How to Order

To reserve your pasture-raised pork, fill out the contact form on this page and complete the checkout process for your Hog Reservation. We recommend placing your order in advance, as availability and hog sizes will vary.

Pickup Instruction

Once you have paid the final amount to Prairie to Fork Farm we will release the Hog from Simon Meat Locker that you may pick it up. Simon Meat Locker will contact you when the processing is complete.**

It takes about 2 weeks from the hog drop off at Simon’s for them to complete the processing for your final pickup appointment.
